The 600-series AP's are AX (wifi 6) units, and the 200 series EAP's are AC (wifi 5) - that's the biggest difference. But CPU and RAM are also significantly improved in the 600 series.
EAP225 - 2x2 2.4 GHz and 5 GHZ bands, AC wireless
EAP245 & 265 - 2x2 2.5 GHz and 3x3 5GHz bands, AC wireless; EAP265 designed for HD (high density) environments
EAP610 & 620 - 2x2 2.4 GHz and 5 GHz bands, AX wireless; EAP620 designed for HD (high density) environments
EAP660 - 4x4 2.4 GHz & 5 GHz bands, AX wireless, designed for HD (high density) environments
Same situation with the AC-class EAP225-Wall and EAP235-Wall units vs. the newer, AX EAP615-Wall. Alll of them are 2x2 on both bands.
So probably not a huge material difference from a radio standpoint outside of the AC vs AX thing. But, processors are also different and I did find that the 200-series units have 64 Mb RAM and 750 MHz quad-core CPU's while the 600 series ceiling units have 512 Mb, and 1 to 2 GHz quadcore CPU's depending on model, a significant difference.
